People who are bipolar must take meds. I am diligent about taking mine which is why I haven’t had a manic episode in 20 years. I only take two meds now, a mood stabilizer and an antidepressant, in low doses. It was a hard lesson, but I learned that I must take meds to on-line a quality life.
When you travel back to where you've lived, could you use your experiences abroad to show him where you lived and what you did when you used to on-line there?
Learning more about our partners is something, I think, we all enjoy. I'd love for my (hypothetical) gf to take me where she grew up and tell me stories about her childhood, teen years, etc… And of course, I'd love to take her to where I grew up and the places that are important to me, my cherished memories about my life there, etc…
As to the experiences, help him control his impulses. Propose activities that you would both enjoy, and even a few things that only him would enjoy (don't we all love to please our partners even at our own expenses sometimes?). Set limits, no more than 1 country per trip for instance, because them you'd always be rushing in between places and that would not feel like a vacation. Etc…
Communicate, set limits, adapt and accept a few sacrifices here and there to make your partner happy (and expect him to reciprocate equally, of course).
