What was he doing when you weren't there? Either he lived in filth, had someone else (family?) clean/cook for him, or he was–as you said–an adult and did it himself.
You should probably find out what was going on and maybe reevaluate some things. If he did the first 2, those are automatic red flags (especially if he isn't interested in changing), if he did the last one…..then he's clearly fine with /you/ taking on the maid role without even having a conversation about what responsibilities you both should share/split. This is also a red flag, imo.
You probably need to confront him about this. While he does work long hours, he shouldn't get to decide for the both of you what you are responsible for. You need to have a clear conversation.
