There absolutely is such a thing as “talking too much”, but it still sounds like the overall problem is that your wife refuses to communicate effectively with you, which in turn makes it impossible for the two of you to make any headway.
Another factor might be that while it was indeed your wife who initially brought the problem the light, she is no longer the only one with an issue. The overall problem now concerns the both of you and your wife doesn't get to have monopoly on what you guys should talk about or when.
Obviously, if she needs space to process something, she should be free to ask for that and you should be respectful enough to give it to her, but there are a lot of different ways to ask for it. “I want space” alone just creates anxiety and uncertainty, but “I need to space to think about this, so let's talk about it again on the weekend and in the meantime just keep things light between us” does the exact opposite.
