She very likely has an eating disorder and needs professional help. The cause might be from depression, body dysmorphia or a number of other reasons but she needs to recognize it and put in the work to fix her mental state and while you can support her during this time, putting a limitation on yourself like that might make it even worse for her.
Look up ways to support someone with an eating disorder and try and convince her to seek help. It might take a lot of convincing, especially if she doesn't see it is as bad as it is.
Note that anorexia to the point of hair loss is very serious. She could (and might already) have life long side effects and it might very well kill her. Permanent neurological disorders and permanent nerve and heart damage are very common along with a bunch of other side effects. Anorexia is one of the most life threatening mental illnesses.
This is too much for you to try and fix no matter how much you want to. You are just as likely to do something wrong trying to do the right thing as you are to help.
