I'd suggested long ago that I'd be open to learning more about her religious beliefs and would be willing to attend church with her if she wanted that however I also made it clear I would never believe the same things that she does and abstinence or any kind of personal lifestyle sacrifice is just a total red line for me.

Take it from someone who knows: this is not going to get better. She's 38, not 18. You're past the honeymoon stage of the relationship, and she's transitioned into what's more comfortable for her. You're seeing what “comfortable” is for her, and it's her not doing much in bed. Then mid-to-late 40s hit, and she's gonna start menopause, which commonly causes drops in libido.
What you've experienced is likely the best it was ever gonna be with her. If you're already unhappy, then you need consider very carefully about how patient you can be when it almost certainly will get worse, not better.
