This probably isn’t what you want to hear, but I think you should break up with her. It sounds like you guys have fundamental beliefs that you aren’t compatible with and I highly doubt she’d be willing to compromise on anything. Not to mentioning the hypocrisy of having premarital sex and then preaching abstinence and living “free of sin.” Think about when you guys have kids and they have prematurely sex or are lgbt. Do you really think she’s going to accept them? As a non believer are you really ok with your kids growing up with that kind of stuff? Yes, and you're right that it's immoral to go for married men: they have vows and responsibilities that you'd be interfering with, to say nothing of the potential damage to his spouse and children.
But being attracted to friends is not immoral. It is certainly injudicious in an open-relationship like the OP's; but the attraction is not immoral. It's just attraction. It's what you do with it that makes you moral or immoral.

Could it be that you're having sex so frequently because she might think that's what you want? Since the beginning of your relationship, you had sex all the time; it actually increased when you moved in together.
If you're good at communication, as you say, then it shouldn't be an issue in telling her that need a break. Try to give her the benefit of doubt.
