    You're talking about yourself and your priorities an awful lot. Just about every paragraph starts with I, and gives an explanation of your thought process- it's like you're trying to justify yourself. Do a CTRL + F and look at all the times you talk about what “I need”. She's broken up with you- thus ends her obligation to care about your needs/wants/learn who you are/why your brain operates the way it does. You clearly have an agenda of trying to get her to reconsider you or even think of you as less ignorant- that won't happen with that message above, she probably won't even read it.

    Don't joke about people's culture. You don't have to relate to someone to appreciate their struggles and circumstances: “I also looked forward to sharing my own culture with you, and to open up about things my own grandfather went through when moving to Canada himself.” Is that really necessary? That's not even your life- and if you're a white person (?) telling her basically what's mandatory to be taught in history classes… well there's more academic coverage of the Irish Potato Famine then there is about the strategic sterilization of Indigenous Women in North America: the struggles are not the same.
